DISCUSSION:

  • Hello Nutrition Ninjas! Today we are going to talk about chicken!
  • What food group is chicken in?
    • That’s right, chicken is in the protein group.
    • All foods made from meat, poultry, seafood, beans, peas, eggs, soy, nuts, and seeds are part of the protein foods group. Beans and peas are also part of the vegetable group. I know this is a long list of foods!
  • Who knows where chicken meat comes from?
    • That’s right, chicken meat comes from chickens. Chickens are usually kept on farms, but in some cities, people can keep chickens in their yards. Do you or any of your neighbors have chickens?
  • Who likes to eat chicken? How does your family make chicken?
    • There are many ways to prepare chicken: barbeque, fried, chicken wings, baked, and as an ingredient in many dishes like casseroles.
    • It’s important to remember that just because chicken can be healthy, when it is fried and a lot of oil or salt is added, it is not very healthy and should be eaten in moderation like the other foods we talked about it our first lesson. Does that make sense to everyone?
  • Does your family buy chicken from the store? Does anybody have their own chickens?
  • Another food associated with chickens are eggs. Chickens lay eggs.
  • Both chicken meat and eggs are packed with protein!
  • Your body uses the protein that you eat in foods to make lots of special protein molecules in your blood that have jobs. For instance, your body uses protein to make hemoglobin.
    • Can you say: HEE-muh-glow-bin? This is the part of your red blood cells that carries oxygen to every part of your body.
  • The states that have the most chickens are Iowa, Ohio, Pennsylvania, Indiana, and Texas. Do we live in any of those states? Which state is the closest to us?
  • Proteins are used to build cardiac muscle. What's that?
    • Your heart! In fact, if you're running or just hanging out, protein is doing important work like moving your body, carrying oxygen to your body, and protecting you from getting sick.
  • In addition to protein, chicken also has iron, zinc, and vitamin B12.
    • Vitamin B12 helps to make red blood cells, and is important for our nerve cells to work well.
    • Iron helps blood carry oxygen from our lungs to the rest of our body.
  • So who here likes to eat chicken? Next time chicken is served in the cafeteria or at your home, share some of what you learned with those you are eating with.
  • I also have something about chicken for you to take home with you today (pass out Chicken Handout).
Assessment Opportunities

At the end of this session, each student should be able to answer at least 3 questions correctly. Questions can be as simple as “Is chicken in the protein food group?” as well as open-ended questions such as “Name a nutritional benefit of chicken.” Other open ended questions for grades 3-5 can be “Name a healthy way to enjoy chicken,” “How does protein help your body?”
